Vegetable Seeds

Parsnips

Parnips are a root vegetable, and soil condition influences their appearance. For a better-shaped parsnip, be sure to plant in soil that is fine and loose. Thinly sow the seed in shallow rows that are no more than 3/4 inch deep, and when the plants have emerged and are vigorously growing, thin them to four to five inches apart. Sow in early spring and be patient as parsnips are slow-growing. To bring out the best flavor after harvesting, store them just above freezing for several weeks.

A strong and dynamic root vegetable that improves in taste only after a frost or two. Measuring about 12 inches long, three inches in diameter, it tapers to a smooth point. The tasty flesh is fine-textured and snowy white. Matures in 130 days. 1/4 oz.
