We are indebted to China for our mustard green, which was grown there and on the continent of Asia for forty centuries. Under the common name Mustard are included many species and varieties of the genus Brassica. The leaves of the cultivated kinds are among our most useful vegetables for salads and greens. Mustard is rich in vitamins, easy to produce and a valuable item in the nation's diet. |
