| Collards
One of the most popular Southern vegetables, it is largely used in place of cabbage. It is hardier and easier to grow than cabbage, and can be grown on poorer soil and withstands insect attacks better. Although often planted during the spring and summer, the principal plantings are made in June, July and August. An excellent vegetable for the late fall, winter and early spring. The flavor is improved by frost. Cultivate like cabbage. |
